Commercial Kitchen Cleaning: A Facility Manager’s Compliance Checklist
Organize daily, weekly, and periodic commercial kitchen cleaning around food safety, grease control, equipment access, and documented accountability.
Kitchens Need More Than End-of-Shift Wiping
Commercial kitchens combine food residue, moisture, heat, grease, and constant movement. A cleaning plan must support food safety while protecting employees, equipment, and surrounding building systems.
The FDA Food Code is a model used by regulators to develop food-safety rules. Facility managers should also follow their local health department’s adopted requirements.
Separate Food-Contact and Facility Cleaning
Food-contact surfaces require approved procedures managed by trained food-service staff. Facility cleaning may cover floors, walls, drains, waste areas, restrooms, loading zones, and other non-food-contact areas. Responsibilities must be explicit so no task is assumed to belong to someone else.
Build a Frequency Matrix
Daily tasks often include floors, spills, waste removal, and touchpoints. Weekly work may address wall splash, cooler exteriors, floor edges, and accessible equipment surroundings. Periodic projects can include deep floor cleaning, high dusting where safe, and loading-area pressure washing.
Our commercial pressure washing services can support exterior waste and receiving areas where approved drainage and containment procedures are in place.
Manage Grease and Fire Risk
Grease accumulation is both a sanitation and safety concern. Exhaust hoods and duct systems require specialist service at frequencies established by applicable codes and cooking volume. NFPA provides commercial cooking safety resources that reinforce the importance of controlling cooking-related fire hazards.
Facility teams should also inspect:
- Floor traction and damaged grout
- Drain condition and odors
- Pest-entry points
- Waste storage and pickup areas
- Leaks beneath sinks and equipment
- Chemical labeling and storage
Document Accountability
Use task logs, supervisor inspections, and corrective-action records. If a drain repeatedly backs up or flooring remains slick after service, escalate the root cause instead of adding more chemical.
Coastal Facilities Group can coordinate janitorial services, floor care, and facility maintenance outside active food-preparation responsibilities. Request a walkthrough to create a clear scope for your hospitality or food-service property.
